The Basque Burnt Cheesecake, also known as San Sebastian Cheesecake, is a delicious and unique dessert. Here's a simple recipe for you:
Ingredients:
700g cream cheese, softened
1/2 cup granulated coconut sugar
1/4 cup agave syrup
5 large eggs
350ml heavy cream
1 teaspoon vanilla extract
1 teaspoon lemon juice
60g all-purpose flour

Instructions:
make sure all ingredients are in room temperature. (you may submerge them in water to balance the temperature)
Preheat your oven to 205°C (400 °F). Line springform pan with parchment paper.
In a large mixing bowl, beat the cream cheese until smooth and creamy.
Gradually add the granulated sugar to the cream cheese and beat until well combined and fluffy.
Add the eggs one at a time, mixing well after each addition.
Pour in the heavy cream and vanilla extract and lemon juice, and continue to beat until the mixture is smooth.
Sift in the all-purpose flour and fold it into the batter until just combined. Be careful not to overmix.
Pour the batter into the prepared springform pan. (cake will double in size so choose your pan size correctly!)
Bake in the preheated oven for about 45-60 minutes or until the top is dark golden brown and the center is set but slightly jiggly.
Remove the cheesecake from the oven and let it cool in the pan. It will continue to set as it cools.
Once completely cooled, refrigerate the cheesecake for at least 4 hours or overnight before serving.
When ready to serve, remove the cheesecake from the springform pan, slice, and enjoy!
